So excited that we blew the budget...

It's been a chaotic month, and along with the move, and a job change, it was the first time shopping Keto in almost a year. I got super excited and blew the budget int he first half of the month, and we've been surviving on lunch meat packs, random veggies, and lots of cheese.... and a few cheat days cause it's what we had in the house. That being said, I just wrote out an ACTUAL shopping list that is attached to a MEAL PLAN. As I get the details locked down, I'm hoping to post recipe and pairings... I did realize that between breakfast for 4 people, and work snacks for 2, we go through about 8-12 eggs a day... and we have no room for our own chickens.

Planning a birthday

I've got two boys with birthdays in the next 4 months. Kids birthdays are FULL of carbs. And I'm trying to figure out how to make it work. I plan to have lots of healthy snacks to eat in addition to the carby disaster that will be the cake (my mother buys the birthday cakes in this family, for all the grandkids, she says. It's her contribution to the party, since often she doesn't know what to get as gifts) So it's going to be a batch of cupcakes and a sheet cake from the local grocery store with the newest fad cartoon figures. It's something I can not change. But what snacks to you think we should have available to munch on? I love all things peanut butter, so I was going to make some low carb peanut butter cookies, and some yummy chocolate peanut butter fudge fat bombs. What other goodies can you think of?

Breakfast success!

I found a great thing! Okay, two great things. We eat a LOT of eggs, like we're half way through the month, and have almost polished off a 5 doz flat of eggs. But it's ok, cause I've found good ways to prep them to make life easier! I hard-baked a dozen eggs to perfection in 30 min, 350*f, in a muffin tin for 30, then submerge them in cold tap water as soon as they come out of the oven! These eggs are easier to peel, and all of them are done just right, none cracked, and there was no mess of splash of vinegar, dash of salt, etc. just put em in, take em out, get em cold! Second thing, in silicone baking cups, I put 1 slice of deli sliced ham, 1 egg, salt pepper and a tbs of shredded sharp cheddar cheese, baked for 25 min, at 350*f, and they are perfect egg bites for a quick breakfast on the way out the door! Failures in snacking - success in dinner!

I have always been a snacker, from when I was a child, I've always snacked. Sliced fruit, crackers, cheese, candy. Now that I'm an adult, and have dealt with hypoglycemia, snacking became a coping method, not just a habit. I know that with Keto, I can still snack, but I just have to be mindful of HOW I'm snacking. And I'm not doing so well. I'm struggling because I keep crackers and fruit snacks around the house for my kids, but won't give into temptation on them myself. I tried to make myself a batch of baked zucchini chips the other day, checked the oven and they weren't ready, 1 minute later, I checked again, and they were burnt... to a crisp. No matter how much salt I add to that, it's never going to get better! That night, I made a great dinner, perhaps a little too protein-y and not enough fat, but I tried.
